Whipped Feta & Peach Salad

Ingredients
Whipped feta
2x 200g blocks of Greek feta cheese
1 pot of Original Bio&Me Kefir Yoghurt
1 tbs extra virgin olive oil
½ tsp sea salt
Freshly ground black pepper
Peaches/Nectarines
3-4 peaches or nectarines stoned and cut into wedges
100g cherry or plum tomato’s halved
1 banana shallot thinly sliced
2 tbs sherry vinegar
1 tsp sea salt
Freshly ground black pepper
2-3 tbs extra virgin olive oil

STEP 1
In a food processor combine all the whipped feta ingredients and blend until smooth, check for seasoning and set aside covered in the fridge.
STEP 2
In a large bowl add all the ingredients for the peaches, toss together and set aside.
STEP 3
When you are ready to serve, spread the whipped feta onto a platter, top with the peach salad, followed by the fresh mint leaves and a good sprinkle of mixed seeds (or even our Low Sugar Naturally Granola!)
STEP 4
Serve as a side dish to a bigger meal or as a lunch with toasted sourdough.
