Kefir Turkish Eggs
A popular Mediterranean brunch, these Kefir Turkish eggs are full of goodness to keep your gut-microbes smiling.

Ingredients
175g Bio&Me Original Kefir Yoghurt
Garlic clove finely grated
Pinch of sea salt
1 tbsp extra virgin olive oil
Sprinkle of chilli flakes
2 Eggs
1 tbsp vinegar of choice
Mixed fresh herbs and pepper to serve
Method
STEP 1
In a small bowl add the kefir, grated garlic, and salt. Stir to combine and set aside.
STEP 2
Bring a pan of water to the boil, add the vinegar (don't salt the water). Crack an egg into a small mug and carefully and slowly plop the egg into the pan of just simmering water, repeat with the second egg. Cook for about 4 mins before removing to drain on a kitchen towel. Once drained, add to the bowl.
STEP 3
Heat the oil and chilli flakes gently in a small pan to infuse and drip over your kefir and eggs.
STEP 4
Sprinkle with mixed fresh herbs and a grind of pepper. Serve with toasted sourdough for some added crunch.
