Very Berry Pistachio Crumble Bars

Ingredients
Dry
1 1/2 cups almond flour
1 1/2 cups oat flour
½ tsp sea salt
Wet
1/2 cup nut butter of choice
5 dates soaked in ½ cup boiling water
1/4 cup olive oil
1 tsp vanilla extract
Berry Compote
500g mixed frozen berries of choice
1 tbs chia seeds
Crumble topping

STEP 1
Pre heat the oven to 160°C Fan. Place the mixed berries into a small saucepan, bringing to a gentle simmer allowing them to soften and burst - simmer for about 5 minutes. Take off the heat and stir through the chia seeds. Set aside.
STEP 2
In a large bowl combine the dry base ingredients. Mix and set aside. Place the soaked dates and the water into a blender with the oil, nut butter and vanilla extract. Blend until smooth.
STEP 3
Fold the wet into the dry, which will give you a dry clumpy dough. Press this into a lined baking dish with your fingers or the back of a spoon, before placing in the pre heated oven for about 15 minutes, to firm up.
STEP 4
When the base is ready, top with the mixed berry compote in an even layer and sprinkle on a few handfuls of granola. Place back into the pre heated oven for about 20 mins until the topping is golden and the berries are bubbling a little at the edges. Allow to cool before cutting squares.
