Cherry Bakewell Chia Pudding

Ingredients
Pudding
8 tbs chia seeds
500ml bottle Bio&Me Vanilla Kefir Drink
Juice of 1 orange
1/2 tsp vanilla extract
½ tsp almond extract (optional)
Cherry Compote
350g frozen or fresh cherries
Splash of water
1-2tbs raw honey (optional)
Vanilla extract
Almond extract
To serve
Toasted flaked almonds
Bio&Me Granola flavour of choice
Fresh cherries
Bio&Me Vanilla Kefir Yoghurt
Almond butter drizzle (optional)

STEP 1
In a medium bowl, combine all the pudding ingredients, mix well, cover and set aside in the fridge.
STEP 2
In a small pan add the cherries, water and honey if using. Bring to a boil and allow to simmer gently until the cherries are softened and the juices are syrupy. Remove from the heat and allow to cool.
STEP 3
When the chia seeds are plump and the compote is cool, you have two options, either store both in airtight containers until ready to serve, or layer into little pots. Either nice little glasses or tubs with lids if you’re on the move.
STEP 4
When serving in bowls add a few big spoons of chia pudding, a good dollop of compote, a glug of kefir and top with toasted flaked almonds, granola and fresh cherries.
