Pistachio Choc Chip Cookies

Ingredients

Dry

1 full box of Bio&Me Pistachio & Chia Overnight Oats

1 tsp baking powder

½ tsp sea salt

70g 70% dark chocolate chips

50g chopped pistachio (optional)

 

Wet

1 cup almond or alternative nut butter

1 mashed banana

¼ cup olive oil

5 dates soaked in ½ cup boiling water

1 tsp vanilla extract

½ tsp almond extract (optional)

Method

STEP 1

Pre heat the oven to 170°C Fan. Line two baking trays with parchment.


STEP 2

In a large bowl combine all the dry ingredients and mix well. Whilst in a blender add the soaked dates, banana and olive oil - blending until smooth.


STEP 3

Combine the blended dates and banana with the nut butter and mix in the egg, vanilla and almond extract. Add the wet to the dry and fold together along with the choc chips and pistachio.


STEP 4

Divide the mixture into 12 cookies. Form each into a ball and flatten with your palm.

Place in the pre heated oven to bake for 10-12mins.

Remove from the oven and allow to cool on the baking trays.
