Berry Banana Bread

Ingredients
1 cup wholemeal baking flour (or GF Blend)
1 cup self-raising flour (or GF Blend)
1 cup Bio&Me Berry Burst Gluten Free Granola
2 ripe bananas mashed
1 cup blueberries
½ cup extra virgin olive oil
½ cup milk of choice
2 eggs
2 tsp vanilla extract
1 tsp baking powder
½ tsp bicarb of soda

STEP 1
Pre heat the oven to 170°C fan. In a medium bowl combine the mashed banana, eggs, oil, milk, vanilla extract and honey/date paste if using.
STEP 2
In a large bowl combine the flours, Berry Granola, baking powder, bicarb, and salt.
STEP 3
Add the wet to mixture to the dry and fold to combine fully, fold in the blueberries and pour into a lined loaf tin. Top with a little extra granola.
STEP 4
Bake for 50-mins to 1 hour or until a toothpick comes out clean.
STEP 5
Allow to cool a little before slicing and serve with kefir yogurt, berries and a drizzle of nut butter for extra gut-loving goodness.
