Pistachio Baked Oats

Serves: 10 Prep: 10 minutes | Cook: 30 mins

Ingredients

1 box of Bio&Me Super Nutty Muesli

½ cup whole pistachio nuts

¼ cup pistachios blitzed to a crumb or very finely chopped

2 tsp baking powder

2 eggs

4 dates soaked in boiling water and blended

550ml milk of choice

1 tsp almond extract (optional)

½ cup pistachio butter

Method

STEP 1

Pre heat the oven to 180C (160C fan). In a bowl combine the eggs, pistachio butter, almond extract, blended dates and then add the milk gradually until you have a smooth batter.

 

STEP 2

In a lightly greased baking dish, add the whole box of muesli, whole pistachio nuts and pistachio crumbs, along with the baking powder and salt. Pour in the milk batter and stir well until combined

 

STEP 3

Place in the pre heated oven for approx. 30 minutes.

 

STEP 4

Remove and drizzle over the pistachio butter and follow that with a layer of vanilla kefir to enjoy right away.
