STEP 1 - Cook fruit
Add raspberries, chopped dates and water to a small saucepan over medium heat. Cook 5–7 minutes, stirring and breaking down the fruit. The dates melt in and sweeten the raspberries.
STEP 2 - Add chia
Reduce to low heat. Stir in the chia seeds and lemon juice if using. Simmer 5 minutes more until thickened.
STEP 3 - Cool & store
Remove from heat. Jam thickens further as it cools. Transfer to a jar. Refrigerate for at least 1 hour before using. Keeps up to 1 week.

Bread: A thin-sliced supermarket ‘seeded’ white loaf won’t hit 10g. Grab a genuine seeded wholemeal/sourdough loaf!
Jam sweetness: No sweetener needed, the dates do the job. If raspberries are particularly tart, add one extra date.
Make ahead: Make a batch of jam on Sunday and use all week
