Dark Choc & Date Loaf

Serves: 6 Prep: 20 minutes | Cook: 30 mins

Ingredients

15 medjool dates, pitted
 1 ½ cup warm milk of choice (we used cashew)

1 cup plain flour (or GF Blend)

½ cup wholemeal flour (or GF Blend)

1 cup Bio&Me Super Seedy & Nutty Granola

2 tsp vanilla extract

1 tsp mixed spice (optional)
1 tsp baking powder
1 tsp bicarbonate of soda

½ tsp sea salt

2 eggs

½ cup 70% dark chocolate chips

Method

STEP 1

Preheat oven to 180°c fan. Add the dates and warm milk together in a bowl, set aside for 20 minutes until your dates are soft, then blend until smooth.

 

STEP 2

Add the remaining ingredients to the blended dates and fold to combine before pouring the batter into a prepared loaf tin, spreading evenly. We recommend topping with some extra granola and choc chips before baking.

 

STEP 3

Bake for 30-35 minutes or until a toothpick comes out clean. 


STEP 4

Add your favourite toppings and tuck in, we used Bio&Me Kefir for those added gut-friendly cultures!
