Wimbledon Inspired Muesli Cookies

Ingredients
- 250g Bio&Me Fruit & Nut Muesli
- 80g Bio&Me Fruit & Nut Muesli Blitz to flour in food processor
- 5 dates soaked in boiling water for 10 minutes and drained
- 60ml Extra Virgin Olive Oil
- 60ml Nut Butter
- 1 egg
- ½ tsp baking powder
- 1 tsp vanilla extract
To Serve:
- Bio&Me Prebiotic Strawberry Yoghurt
- Fresh Strawberries
Method
- Pre heat the oven to 170°C
- In a bowl combine the muesli and ground muesli flour, with the baking powder.
- In another bowl add the oil, egg and vanilla and whisk to combine.
- In a food processor blitz the soaked and drained dates with the almond butter, to make a smooth soft paste. Add this to the egg and oil mix and whisk until smooth.
- Add the wet into the dry and mix with a wooden spoon until combined.
- Using a round pastry cutter spoon in 2-3 tbs of cookie mix to form an around. Repeat until you have approx. 12 cookies.
- Bake in the pre heated oven for 10-12 minutes until lightly golden.
- Allow to cool a little and serve with Bio&Me Prebiotic Strawberry Yoghurt and chopped strawberries!
