Wimbledon Inspired Muesli Cookies

Ingredients

  • 250g Bio&Me Fruit & Nut Muesli  
  • 80g Bio&Me Fruit & Nut Muesli Blitz to flour in food processor
  • 5 dates soaked in boiling water for 10 minutes and drained
  • 60ml Extra Virgin Olive Oil
  • 60ml Nut Butter
  • 1 egg
  • ½ tsp baking powder
  • 1 tsp vanilla extract

Method

  1. Pre heat the oven to 170°C
  2. In a bowl combine the muesli and ground muesli flour, with the baking powder.
  3. In another bowl add the oil, egg and vanilla and whisk to combine.
  4. In a food processor blitz the soaked and drained dates with the almond butter, to make a smooth soft paste. Add this to the egg and oil mix and whisk until smooth.
  5. Add the wet into the dry and mix with a wooden spoon until combined.
  6. Using a round pastry cutter spoon in 2-3 tbs of cookie mix to form an around. Repeat until you have approx. 12 cookies.
  7. Bake in the pre heated oven for 10-12 minutes until lightly golden.
  8. Allow to cool a little and serve with Bio&Me Prebiotic Strawberry Yoghurt and chopped strawberries!
